margarita pizza

the "true" italian pizza. this is so good and so easy. you're going to love it.

start with crust. either buy one and cook according to package, or buy pizza dough (we especially love trader joe's ww stuff), or make mom's homemade kind. i usually make mom's bread recipe and turn half of it into bread and use the other half for pizza dough; then you don't need to wait for it to rise. it's really good for pizza if you do a half white/half whole wheat combo.

so roll out your dough and spread 2 or 3 T olive oil over it. sprinkle with a mozzarella cheese.
top with the following mixture (combine these and mix in bowl):
  • 4-5 large tomatoes, diced into small pieces
  • 2-3 cloves garlic, chopped small or finely minced
  • salt to taste
  • bunch of fresh basil (10-20 leaves) cut into small pieces
i have no science to this recipe, so play around with it. we bake our pizzas for about 12-20 minutes at 425 degrees. you know it's done when the cheese is melted and just starting to turn golden.

take pizza out and add more fresh basil if you want. i also sprinkled some freshly grated romano cheese on top; you could also do grated parmesan.

i'm tellin' ya, this stuff was so good. we can't wait to do it again.
