wheat and bean salad

Here's another good recipe to make with your cracked wheat.  The blend of flavors with the cumin and chili powder is delicious. We've made it multiple times now and our favorite way to eat it is on grilled quesadillas. It's also one you can make early in the day and have it ready by the time dinner rolls around.

Oh, this recipe also makes a lot so either half the batch or make some new friends to share it with!

Mix the following together and let chill for at least an hour:

  • 1 green pepper, diced
  • 1 orange or red pepper, diced
  • 1 small red onion, diced
  • 1 bunch fresh cilantro, leaves chopped
  • 1 small jalapeno pepper, cored and diced (I always leave this out)
  • juice of 1 lime
  • 3 c. cooked wheat berries
  • 1 can corn, drained
  • 1 can black beans, drained and rinsed
  • 2 t. chili powder
  • 2 t. cumin powder
  • 1/4 c. cider vinegar
  • 1 T. sugar
  • 1/2 c. vegetable oil (I think it only needs about half this much)
  • 1 t. salt
