Ingredients:
- 1 tsp. olive oil
- 1 sweet onion, chopped
- 3 cloves garlic, minced
- 3/4 c. uncooked quinoa
- 1 1/2 c. vegetable broth
- 1 tsp. ground cumin
- 1/4 tsp. cayenne pepper
- S+P to taste
Heat the oil in a saucepan. Stir in onion and garlic and saute until lightly browned. Mix quinoa into the pan and cover with veggie broth. Season with cumin, cayenne, S+P. Bring to boil and reduce heat. Simmer for 20 minutes.
- 1 c. frozen sweet white corn, thawed (can used canned)
- 2 Roma tomatoes, seeded and diced (mom adds towards end so they're not too hot)
- 1 T. fresh squeezed lime juice
- 2 cans black beans, rinsed and drained
- 1/2 c. chopped fresh cilantro
- 1 diced jalapeno (optional)
Stir in corn and continue to simmer for another 5 minutes until heated through. Stir in black beans and cilantro. Just before serving add cotija cheese crumbled on top.
